This La Flecha lot comes from one of the best coffee regions in Colombia: Nariño. Cherries mature slowly, they tend to be smaller but denser. Farmers are small holders (Average 0.5-2hc each) which allows them to closely monitor their harvest at every stage of the process. Cherries for this micro-lot were picked following strict ripeness criteria, then later pulped, and exposed to a 35-hour dry fermentation. Later placed on raised beds (pictured) for 11 days until 10 moisture content was reached.
