Southern Ethiopia is renowned for coffee production and is one of the most sought after origins. The mild, high altitude climate provides the ideal conditions for growing dense, high grade beans. Many farmers are members of cooperatives, engaging in strict grading and processing methods which, when coupled with the country's long history of growing coffee, makes Ethiopian beans consistent and flavourful.
Yirgachefe is prized for its bright, citrus-acidity, light sweetness and floral notes of jasmine and kumquat.
