Flores is one of the smaller islands in the Indonesian archipelago. It is only 580 kilometers long. The island is located 320 kilometers to the east of Bali.
Most coffee production on Flores is generally situated on the rugged slopes of the island’s many active and inactive volcanoes. Volcanic soil is fertile and verdant and helps in high quality coffee production. This is also the characteristic of coffee in this area, the cultivation is done using natural fertilizers and without pesticides.
Production on the island is predominately shade-grown, and historically, Pulped Natural processing has been the norm. However, due to industry growth typical Pulped Natural processing has increasingly given way more to Fully washed and Wet Hulled methods, especially at cooperative wet mills. The character of Bajawa Specialty coffee is not the same as other Indonesian coffees. The uniqueness is there are nutty or nut scents as well as tobacco in the aftertaste.
There are at least two names known as the best producers of coffee Flores, namely Bajawa and Manggarai. Bajawa is a city in Ngada Regency, East Nusa Tenggara.
The Flores Bajawa coffee beans are grown in small highland area along the southern coast with 1,200 – 1,600 meters altitude above sea level. The special quality of the Flores Bajawa coffee is that it has a spicy and fruity note with full body and medium acidity with a nutty dark chocolate and a touch of a natural caramel flavor.
